Whip up some mouth-watering desserts using delectable Medjoul dates. Add a delicious twist to these creative recipes with Medjoul palm dates!

Medjoul & Vanilla Oatmeal

Ingredients :

  • 6 Medjouls, pitted
  • 1 Cup Oats
  • 3 Cups of Water
  • 1 ½ Tablespoon of Vanilla Extract
  • ½ Tablespoon of Edible Coconut Oil
  • ½ Teaspoon Salt

Preparation:
Add 1 Tablespoon of Vanilla Extract to 1 Cup of Water. Allow the Medjouls to soak in the water for 20 minutes. Next, add the dates to a food processor along with 1 Tablespoon of the water in which the Medjouls were soaked to create a paste.

Now, combine 2 Cups of Water, Coconut Oil, Salt and the remaining Vanilla Extract into a saucepan and let it boil. Add in Oats and cook for 5-6 minutes. Gradually, introduce the Medjoul paste into the saucepan and cook for another minute or two. Let the Oatmeal cool down slightly before you serve it warm for breakfast or as a late afternoon snack.

Orange Flavoured Medjoul Cookies

Ingredients :

  • 4 Medjouls, pitted
  • 1 ¼ Cup of All-Purpose Flour
  • ¼ Cup of Sugar
  • 1 Tablespoon of Orange Zest
  • 2 Tablespoons of Fresh Orange Juice
  • 8 Tablespoons of Unsalted Butter
  • 2 Tablespoons of Honey
  • 3 Tablespoons of Ice Water
  • ½ Teaspoon of Salt

Preparation:
Combine the All-Purpose Flour, Sugar, Salt and half of the Orange Zest in a one bowl. Next, add butter and beat only slightly until the mixture is crumbly. Drizzle the Chilled Water over the mixture. Beat until it forms a dough. Cover it for 20 minutes. Meanwhile, add the Medjouls, remaining Orange Zest and Fresh Orange Juice into a blender to chop them coarsely. Next, heat the oven to 350 degrees. After 20 minutes, the dough is ready to be made into small balls that can be rolled out into little circles. Place 1 teaspoon of the Medjoul mixture inside each circle of dough and fold all sides to arrive at stuffed balls. Press them to flatten them slightly before placing them on the baking sheet.

Press the pastries again before brushing some Milk and Honey on them. Bake them for 30-40 minutes until golden. Let them cool on a wire rack before you go ahead and serve these zesty Medjoul Cookies!

Medjoul & Walnut Muffins

Ingredients :

  • 4 Medjoul Dates, pitted
  • 1 Cup of Black Coffee
  • 1½ Cup of All-Purpose Flour
  • 1 Cup of Whole Wheat Flour
  • 1 Tablespoon of Baking Soda
  • ½ Teaspoon Salt
  • 2 Egg Yolks
  • ½ Cup of Safflower Oil
  • ¼ Cup of Honey
  • ½ Cup of Powdered Sugar
  • 1 ½ Cup of Milk
  • ½ Cup of Walnuts

Preparation:
Add the Medjouls to a Cup Of Black Coffee and allow them to soak in for 2-3 hours. Now take all the dry ingredients in a bowl – Regular Flour, Whole Wheat Flour, Salt, Sugar and Baking Soda and whisk them together. Next, add the egg yolk into another bowl. Gradually, add Safflower Oil followed by Honey and Milk into the mixture. Whisk until smooth. Add the mixture to the blend of dry ingredients and beat until ready for baking.

Now, before you can start pouring the mixture into paper muffin cups, chop the Walnuts and Medjouls and add them to the mix. Line the baking tray with paper cups, fill them upto half and bake for 20 minutes at 400 degrees. Delicious muffins will meet you on the other side.

Medjoul & Cinnamon Shake

Ingredients :

  • 2-3 Medjoul Dates, pitted
  • 1 Tablespoon of Protein Powder
  • 2 Cups of Skimmed Milk
  • 1 Teaspoon of Honey
  • Pinchful of Cinnamon Powder

Preparation:
Chop the Medjouls into mid-sized chunks and add them into the blender. Next, add the Protein and Cinnamon Powders. Slowly, pour the Skimmed Milk. Now, blend until it forms a smooth shake. Pour out the liquid into a tumbler. Add a spoonful of Honey and blend well before drinking up a glass of goodness.

Goat Cheese-Stuffed Medjouls

Ingredients :

  • ¼ Cup of fresh Goat Cheese, softened
  • 2 Tablespoons of Cream
  • 12 Medjoul Dates
  • Pinchful of Sea Salt

Preparation:
Slit the Medjouls lengthwise and discard the pit. Next, beat the Goat Cheese by hand or using a blender until it is completely smooth. Add Cream to this mixture and blend till it develops a spread-like consistency. Fill the slit in the Medjouls with a teaspoon of the mixture. Sprinkle Sea Salt to taste just before serving. Get ready for a sumptuous snack.
